|250 ml||chicken stock|
|1 tsp||couscous seasoning|
|2||chicken breasts, skin and bones removed|
|5 tbsp||olive oil|
|1 large||carrot, thinly sliced|
|4||green onions, sliced|
|375 g||broccoli, in florets|
|250 g||zucchini, diced|
|1 tsp||garlic, minced|
|2 tbsp||soy sauce|
|2 tbsp||ginger, finely chopped|
|2 tbsp||flaked almonds|
InstructionsSoak the couscous in 250ml of the chicken stock and set aside. Cut the chicken breast into 2cm cubes.
In a wok or large pan, stir-fry the meat in olive oil for 2-3 minutes; remove from the pan. Add carrots and onions into the pan and stir-fry for 1-2 minutes. Add zucchini, broccoli, ginger, garlic and the remaining chicken stock. Cook just until the broccoli is still bright green and slightly crispy. Return the meat to the pan and add the couscous with its seasoning. Season to taste with salt and cook until all is hot.
Serve the dish sprinkled with briefly butter-fried almond flakes.
