Ingredients

16	chicken wings
1	green bell pepper, diced
1	red bell pepper, diced
3 tbsp	vegetable oil
400 g	mushrooms, sliced
	salt and pepper
200 g	single cream
	paprika powder
3	egg yolks
50 ml	sherry

Instructions

In a large pan, heat the oil and fry the chicken wings until golden all around. Add the vegetables and cook stirring for another 5 minutes. Season with salt, paprika powder and pepper.

Pour over the cream and simmer for 4-5 minutes. Mix together the egg yolks and the sherry. Take the pan from the heat and stir in the egg mixture. Adjust the seasoning before serving.
