Ingredients
800 g | chicken breast, diced |
1 | onion, chopped |
2 clove(s) | garlic, minced |
1 glass(es) | peanut butter |
1 large can(s) | coconut milk |
200 ml | vegetable stock |
1 tsp | chili paste |
1 tsp | ginger, grated |
½ tsp | ground cumin |
2 tbsp | soy sauce |

For the marinade: | |
2 tbsp | soy sauce |
1 clove(s) | garlic, minced |
1 piece(s) | ginger, chopped |
1 tbsp | lime juice |
Instructions
In a bowl, mix the ingredients for the marinade together. Spike the chicken bits onto skewers, turn them in the marinade and allow to marinate in the refrigerator for 2 hours.Preheat the oven grill. Arrange the skewers in a shallow casserole and grill for 20 minutes until golden, turning once.
In a saucepan, heat some oil. Fry the garlic, ginger and onion over medium heat until lucent. Stir in the peanut butter and coconut milk, stir until well combined, then add the stock and bring to a boil. Cook stirring until creamy. Add the chili paste, cumin and soy sauce, check seasoning and correct, if necessary.
Arrange the chicken satÚs and the peanut butter sauce on serving plates. Serve with rice.
