Chicken quesadillas with mango salsa recipe details
Sometimes a man wants spicy, sometimes he wants sweet. This quesadilla falls on the sweet side of the line, with mangos and BBQ sauce providing the flavor.

Ingredients
Serves: 2- For Salsa:
- 1 mango, peeled, diced
- 2 small tomatoes, seeded and diced
- 1/3 cup diced green pepper
- 3 green onions, chopped
- 3 tablespoons minced fresh cilantro
- 1 small Anaheim or jalapeno pepper, seeded and diced
- 3 tablespoons lime juice
- Salt and pepper, to taste
- For Quesadillas:
- 1 tablespoon butter, room temp
- 2 (8-inch) flour tortillas
- 3/4 cup shredded Cheddar cheese
- 1 cup chopped cooked chicken breast
- 1/4 cup BBQ sauce
Preparation method
Prep: 10 mins | Cook: 5 mins1. Combine all salsa ingredients in a bowl, cover with plastic wrap, and let it marinate in the refrigerator while you make the quesadillas.
2. Heat a griddle to low heat. Melt half of the butter on the griddle, and place the tortillas in the hot butter. Cover each tortilla with 3 tablespoons of cheese, some of the chicken, and some of the BBQ sauce. Then add the rest of the cheese and fold the tortilla in half to cover the ingredients.
3. Continue to cook on low for a couple minutes on each side until the tortillas are crispy and the cheese is melty. Serve with salsa.
