Ingredients
Serves: 1- juice from 1 lime
- 1/4 cup salsa
- 1 tablespoon Tabasco(R) Smoked Chipotle Pepper Sauce
- 1 teaspoon chopped cilantro
- 1 boneless skinless chicken breast, cut into 1/8 inch strips
- pinch seasoned salt
- pinch ground black pepper
- pinch garlic powder
- pinch chile powder
- pinch cayenne pepper
- pinch ground cumin
- butter
- 2 flour tortillas
- 1 teaspoon vegetable oil
- 1 (8 ounce) bag shredded Colby and Monterrey Jack cheese
Preparation method
Prep: 5 mins | Cook: 20 mins1. Place small skillet over medium-low heat on stove. Combine lime juice, salsa, Tabasco sauce, and cilantro in heated skillet.
2. Season one side of chicken slices with seasoned salt, black pepper, garlic powder, chile powder, cayenne pepper and ground cumin to taste. Place chicken, seasoned side down, into simmering skillet. Heat chicken for approximately 10 minutes or until liquid is is cooked into chicken, flipping occasionally.
3. While that is cooking, butter one side of each tortilla. Place one tortilla butter side down into a large skillet. Sprinkle cheese as desired on top side of tortilla.
4. When chicken is done, remove from heat and turn stove up to medium heat. Place chicken slices on top of cheese-sprinkled tortilla. Sprinkle more cheese over chicken. Place the other tortilla, butter side up, on top.
5. Place quesadilla in skillet over medium heat. Cook for 10 minutes or until cheese is melted, flipping once.The easiest flipping method is to put a large plate on top of the quesadilla in skillet, flip skillet, slide quesadilla back onto skillet, other side down.
6. Once cheese is melted, slice quesadilla into 8 pieces and enjoy.
7. Dip in salsa if desired.
