Chicken portobello recipe details
A wonderful combination of portobello mushrooms, Roma tomatoes, and red peppers in a white wine sauce. Serve over pasta or rice.

Ingredients
Serves: 4- 4 boneless, skinless chicken breasts, cut into strips
- 2 teaspoons garlic powder
- salt and pepper to taste
- 2 tablespoons olive oil
- 3/4 cup white wine, divided
- 3/4 cup chicken stock, divided
- 2 portobello mushrooms, gills underneath scraped out and diced large
- 2 Roma tomatoes, seeded and chopped
- 4 cloves garlic, chopped
- 1 cup chopped red pepper
- 1 teaspoon Italian seasoning
- cayenne pepper to taste (optional)
Preparation method
Prep: 10 mins | Cook: 20 mins1. Season the chicken breasts with garlic powder, salt, and pepper.
2. Heat olive oil in large skillet over medium high heat until nearly smoking. Saute chicken strips until no longer pink. Remove chicken from skillet and keep warm.
3. Add 1/2 cup wine and 1/2 cup of chicken stock to the skillet. Maintain medium-high heat. Scrape up chicken from bottom of pan. Cook until the liquid is reduced to about 1/3 cup. Add portobello mushrooms, Roma tomatoes, garlic, and red pepper; lower heat to medium and cook for 10 minutes, stirring frequently.
4. Stir in chicken, remaining wine and chicken stock, Italian seasoning, and cayenne pepper. Cover, lower heat to medium low and cook for 5 minutes, stirring occasionally.
