Porter cake recipe details
Ingredients
250 ml | porter, if available or use 125ml Guinness or Murphy’s plus 125ml water |
250 g | unsalted butter, softened |
250 g | brown sugar |
1 kg | mixed dried fruit, 300g each of raisins, sultanas and currants with 100g mixed peel |
500 g | plain flour |
½ tsp | bicarbonate of soda |
1 tsp | mixed spice |
1 medium | lemon, zest only |
3 medium | eggs |
Instructions
Grease a 9-inch, 22cm cake tin and line it with greaseproof paper or parchment. Preheat the oven to Gas Mark 3, 170°C, 325°F.Melt the butter and the sugar into the porter in a saucepan. Add the fruit and simmer for 10 minutes. Remove from heat and allow to cool.
Transfer to a large bowl and add sieved flour, baking soda and spice, and then the zest. Beat the eggs and mix in with a wooden spoon.
Pour into prepared tin and bake for about 1¾ hours. Test with a skewer to see whether it is done; if the skewer comes out clean after insertion into the centre of the cake, it is ready.
Allow to cool in the tin, turn out and serve.
About the recipe:
I have tasted porter only once, many years ago in an East London Irish pub. It was a popular style of beer in the UK and Ireland but is now rarely to be found. I believe that it is no longer brewed by any of the major breweries although some smaller breweries may still produce it for sale in some real ale establishments or house-owned pubs. It may also be available bottled, although probably brewed elsewhere.
