Ingredients
Serves: 4- 2 whole chicken breasts
- 1 bay leaf
- 1/2 cup chopped fresh mushrooms
- 1/3 cup finely chopped onion
- 1/4 teaspoon. dried basil, crushed
- 1/4 teaspoon dried thyme, crushed
- 1/8 teaspoon paprika
- 1 tablespoon butter
- 2 beaten eggs
- 1/2 cup Parmesan cheese SAUCE:
- 1/4 cup chopped onion
- 2 tablespoons butter
- 3 tablespoons flour
- 2 cup milk
- 1/4 cup dry white wine
- 1 cup shredded mozzarella cheese
- 1 package manicotti
Preparation method
Prep: 30 mins | Cook: 30 mins1. To make filling: In saucepan, combine chicken, bay leaf, and enough water to cover. Bring to boil and cover and simmer for about 20 minutes or until tender. Remove chicken and let cool. Discard skin and bones. Finely chop or grind chicken and set aside.
2. In saucepan, cook mushrooms, onion, basil, thyme, paprika, and 1/2 teaspoon salt in butter until vegetables are tender. Remove from heat and let cool. Then blend eggs, Parmesan cheese, and chicken. Use to stuff manicotti.
3. Preheat oven to 350 degrees F (175 degrees C).
4. To make sauce: In saucepan, cook onion in butter until tender. Stir in flour, add milk all at once. Cook and stir until thickened and bubbly. Add wine and stir in mozzarella until melted.
5. Stuff cooked pasta with filling. Arrange filled pasta in greased 12x7x2 baking dish. Pour cheese mixture over pasta. Cover with foil.
6. Bake for 25 to 30 minutes or until heated through.
