Chicken mixed stir fry with tie guan yin details
INGREDIENTS:Serves 4
A:
25g or 5 tea bags pf Tie Guan Yin tea leaves
200ml hot water
200g chicken breast, sliced
1 tbsp cornflour
1.5 – 2 tbsp light soy sauce
¾ tsp dark soy sauce
Dash of pepper
B:
150g cauliflower
5 baby corns, sliced
½ carrot, sliced
30g snow peas
C:
2-3 tbsp cooking oil
3 slices ginger
5 garlic cloves, chopped finely
1 tsp Shao Xing wine
½ tsp salt or to taste
D:
2 tsp cornflour mixed with 1 tbsp water
Method:
- Soak Tie Guan Yin tea leaves or tea bagss in hot water for 30 minutes. Remove tea bags or strain to discard tea leaves. Set aside.
- Marinade chicken breast with seasoning in A for at least 30 minutes.
- Clean and prepare mixed vegetables in B.
- Heat oil in a wok. Add ginger slices and chopped garlic. Sauté until fragrant. Add marinated chicken breast and continue to fry. Add wine at the sides of the wok (for better flavour).
- Add mixed vegetables and continue to fry for a while. Add tea in (1). Cover and simmer over medium heat so that tea will be absorbed by the vegetables.
- Thicken gravy with D. Dish out and serve.
