Asian chicken salad recipe details
Ingredients
¼ | red onion, thinly sliced |
2 clove(s) | garlic, minced |
2 tsp | peeled and grated fresh ginger |
1 tsp | sugar |
2 tbsp | white rice vinegar |
3 tbsp | peanut oil |
1 tsp | chilii oil |
2 tbsp | soy sauce |
1 | cucumber, peeled, seeded and cut into matchsticks |
1 | red bell pepper seeded, deribbed and cut into matchsticks |
100 g | bean sprouts |
200 g | coarsly chopped red or white cabbage |
2 tbsp | chopped fresh cilantro leaves |
125 g | chopped roasted peanuts |
3 | chicken breast halves |
Instructions
In a small bowl combine the onion, garlic, ginger and sugar. Stir in the vinegar, peanut oil, chilli oil and soy sauce until well mixed. Season with salt, if desired. Let stand while you prepare the remaining ingredients.Fill a saucepan with salted water and bring to a boil. Add the chicken breast, reduce the heat and simmer for 10 minutes. Skim off any foam on the surface, turn off the heat, cover the pan and let stand for 15 minutes. Drain the chicken breast and let cool completely, then bone and skin them.
Cut the chicken meat into long, thin strips and place in a salad bowl. Add the cucumber, bell pepper, bean sprouts and cabbage. Pour the dressing over the salad and toss well.
Sprinkle with the cilantro and peanuts and serve.
