Chicken Marinara recipe
Ingredients
8 | chicken thighs, boneless |
8 tbsp | olive oil |
4 clove(s) | garlic, minced |
3 | onions, chopped |
800 g | tomatoes, chopped |
2 tsp | dried oregano |
130 g | Parmesan cheese, grated |
50 g | flour |
2 large | eggs, beaten |
200 g | mozzarella cheese |
50 g | bread crumbs |
salt and pepper, to taste |
Instructions
SautÚ garlic and onions in 4 tbsp olive oil in a large skillet until tender, about 4 minutes. Add tomatoes and oregano and cook until sauce thickens, about 10 minutes. Mix in basil and season to taste with salt and pepper. Set aside.
Combine breadcrumbs and Parmesan cheese in a small bowl.
Place flour and eggs in separate bowls.
Take chicken thighs and coat first with flour, then eggs and then breadcrumb mixture.
Heat remaining oil in a large skillet over medium heat. Add chicken and sautÚ until golden brown and cooked through.
Preheat oven to 200░C.
Place chicken pieces in an oven proof serving dish and spoon sauce over chicken pieces. Sprinkle with Mozzarella cheese and bake for about 5-10 minutes until cheese has melted.
