Ingredients
8 | chicken thighs, boneless |
8 tbsp | olive oil |
4 clove(s) | garlic, minced |
3 | onions, chopped |
800 g | tomatoes, chopped |
2 tsp | dried oregano |
130 g | Parmesan cheese, grated |
50 g | flour |
2 large | eggs, beaten |
200 g | mozzarella cheese |
50 g | bread crumbs |
salt and pepper, to taste |
Instructions
sautee garlic and onions in 4 tbsp olive oil in a large skillet until tender, about 4 minutes. Add tomatoes and oregano and cook until sauce thickens, about 10 minutes. Mix in basil and season to taste with salt and pepper. Set aside.Combine breadcrumbs and Parmesan cheese in a small bowl.
Place flour and eggs in separate bowls.
Take chicken thighs and coat first with flour, then eggs and then breadcrumb mixture.
Heat remaining oil in a large skillet over medium heat. Add chicken and sautee until golden brown and cooked through.
Preheat oven to 200░C.
Place chicken pieces in an oven proof serving dish and spoon sauce over chicken pieces. Sprinkle with Mozzarella cheese and bake for about 5-10 minutes until cheese has melted.
