Ingredients

2 | onions, chopped |
2 clove(s) | garlic, chopped |
1 bunch(es) | greens, chopped |
3 | tomatoes, diced |
1 | green bell pepper, cut into fine strips |
2 tbsp | peanut butter |
vegetable oil | |
salt and pepper | |

chicken stock or vegetable stock or water |
Instructions
In a wide pan, heat some oil and brown the chicken pieces all around. Take out of the pan and stir-fry the onions, garlic and vegetables in the pan. Add the tomatoes and cook for some minutes. Return the chicken pieces and cover with stock. Simmer for 15 minutes. Then add the peanut butter and stir until well combined.
Season to taste with salt, chili, curry and pepper. Simmer for another 5-10 minutes or until the chicken is cooked through. Finally add the bell pepper strips and cook just briefly to keep them crisp.
Serve with rice or couscous.
