Chicken in cider gravy recipe details
Ingredients
1 kg | chicken wings |
300 ml | cider |
2 medium | onions, peeled, chopped |
3 medium | carrots, peeled, chopped |
1 large | leek, trimmed, chopped |
4 clove(s) | garlic, chopped |
3 tsp | tomato puree |
1 tbsp | flour |
2 l | chicken broth |
1 | bay leaf |
2 sprig(s) | thyme |
Instructions
Preheat the oven to 200°C.Roast the wings and vegetables for about 30 minutes, giving them a good stir every so often.
When golden-brown in colour, add the tomato purée, then the flour and stir well in the roasting pan. Return the pan to the oven for another 15 minutes.
Remove the roasting tray from the oven and remove chicken and vegetables in order to prepare the sauce. Keep warm.
Add the cider and half of the broth and stir well. Transfer everything into a large saucepan, and add the remaining broth as well as thyme and bay leaf.
Bring to the boil and simmer very gently for about 1 hour. Skim occasionally, as required.
Strain the gravy through a sieve and remove any fat with a ladle. Check its strength and reduce it if necessary. If not thick enough, dilute some cornflour in a little cold water and stir in.
Combine chicken, vegetables with the gravy and roast again for 5 more minutes.
