Ingredients
60 ml | oil |
salt and freshly ground black pepper | |
1 | onion, chopped |
garlic, finely chopped | |
2 | red bell peppers, seeded and cut into strips |
1 ½ kg | chicken, ready to cook, jointed into 8 pieces |
6 tbsp | tomato puree |
1 tsp | rosemary |
1 tsp | marjoram |
1 tsp | thyme |
3 | carrots, sliced |
½ small | celeriac, diced |
200 ml | dry white wine |
2 | courgettes, sliced |
Instructions
In a saucepan heat the oil. Sauté the garlic and the onion until lucent. Stir in the chicken pieces and fry until golden all around. Add the tomato purée and cook stirring for 30 seconds.
Deglaze with the wine and bring to the boil. Add all the remaining ingredients except the courgettes. Cover and simmer for 20-30 minutes. Add the courgettes and cook for 5 more minutes or until soft. Season to taste with salt and pepper.
Serve with fresh white bread.
