Ingredients

salt and pepper
10 sprig(s) thyme, chopped
400 g chicken breast fillet, cut into thin escalopes
1 medium egg
80 g freshly grated Parmesan cheese
80 g breadcrumbs
3 tbsp oil
80 g flour

Instructions

Season the escalopes with salt and pepper.

Break the egg into a soup plate and whisk slightly with a fork. In another plate fill some flour and in a third combine the breadcrumbs with cheese and thyme. Turn the chicken escalopes first in the flour, then in egg and finally in the breadcrumb mixture.

In a large pan, heat the oil. Fry the escalopes until golden brown and crispy on both sides.
