Ingredients

500 g flour
1 tsp salt
80 g sugar
10 g dry yeast
80 g butter, softened
30 ml milk
1 medium egg, beaten
grated rind of 1 lemon
handful grated rind of 2 oranges

Instructions

Warm up the milk in a saucepan. Then transfer to a bowl and add the sugar and the yeast. Add all the remaining ingredients, but only half of the egg, and kneed to a soft dough. Set aside the remaining half of the egg.

Place the dough in a bowl, dusted with flour, cover with a damp towel, and let it rise, 1 hour at room temperature.

Form about small 7 buns and 1 larger bun to be the centre piece, placing the smaller ones around. Then cover the cake again with a damp towel and let it rest for 30 minutes.

Preheat oven to 180°C.

Before baking, brush the buns with the rest of the egg. Bake for about 30 minutes. Cool on rack.
