Chicken edamame pasta salad recipe details
A cool pasta salad for scorching summer days. But we didn’t forget the meat!

Ingredients
Serves: 8- 1 (16 ounce) package spaghetti
- 1 cup frozen shelled edamame
- 3 cups cubed or shredded cooked chicken breast
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 cucumber, chopped
- 1 red onion, chopped
- 1 teaspoon minced fresh ginger root
- 1 cup prepared sesame ginger salad dressing
- 3 green onions, chopped
Preparation method
Prep: 10 mins | Cook: 10 mins1. Bring large pot of water to boil and cook spaghetti according to package directions. When there’s 5 minutes left for the spaghetti to cook, add the edamame to the pot of boiling water. Drain everything together and run pasta and edamame under cold water for at least 30 seconds.
2. Place in large serving bowl. Combine with chicken, peppers, cucumber, onion, and ginger. Toss with salad dressing and garnish with chopped green onion.
