Chicken cordon hugh recipe details
A golden-brown crispy chicken dish, filled with honey ham, rubbed with brown sugar, and topped with a honey and brown sugar glaze.

Ingredients
Serves: 6- 1/4 cup almonds
- 6 boneless skinless chicken breasts
- 6 (1/4 inch) slices honey ham
- 2 1/2 ounces wildflower honey (any will do)
- 2 1/2 ounces water (add lemon if desired)
- 3 1/2 teaspoons brown sugar
- 1/2 cup flour
- 1 cup bread crumbs
- Salt and pepper, to taste
- 1 tablespoon butter, or as needed
- For glaze:
- 3 1/4 ounces honey
- 1 3/4 ounces water
- 3 teaspoon brown sugar
Preparation method
Prep: 15 mins | Cook: 30 mins1. Slowly roast the almonds in a 140-145 degrees F oven for ten to fifteen minutes to release the flavorful oils inside. Let cool, then chop into relatively small pieces.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Mix the honey with water along with brown sugar and whisk thoroughly.
4. Dredge the chicken in flour, then the honey mixture followed by bread crumbs. Season with salt and pepper.
5. Place the chicken into a sautée pan with just enough butter to prevent the chicken from sticking and get the outside nice and lightly crunchy.
6. After you set the chicken to the side, rub the pieces of ham with brown sugar and toss them into the pan just long enough to caramelize some of the sugar.
7. Next, slice the pieces of chicken open on one side, be sure to leave a hinge piece in the back, and stuff it with the ham.
8. Place the chicken into a 4 inch deep baking pan. Sprinkle half of the almonds over them and pour the remainder of the honey/water mixture over them. Cover with aluminum foil, being sure to perforate the foil.
9. Bake in the preheated oven, until the internal temperature reaches 160 degrees F, 20-25 minutes.
10. While the chicken is baking, whisk up another honey glaze using 3 1/4 ounces of honey, 1 3/4 ounces of water and 3 teaspoons of brown sugar. It will be thicker than the previous glaze and will stick better.
11. Remove chicken from the oven, drizzle with the glaze and sprinkle the rest of the almonds over it, and enjoy!
