Ingredients

750 g	parsnips, peeled and diced
400 g	carrots, peeled and diced
500 g	chicken breast fillets, cut into 3cm cubes
1 bunch(es)	spring onions, sliced
1 tbsp	oil
1 dash(es)	single cream
300 ml	vegetable stock
	salt and freshly ground black pepper
1 tsp	sugar
2 tsp	curry powder

Instructions

In a large saucepan, heat the oil. Fry the meat for 5 minutes until slightly golden all around. Add the vegetables and cook stirring for 5minutes. Stir in the sugar and the curry powder and season with salt and pepper.

Pour in the stock and bring to a boil. Reduce the heat and simmer for another 5 minutes. Stir in the cream. Adjust the seasoning before serving.
