Chicken breast with parsnips and carrots recipe details
Ingredients
750 g | parsnips, peeled and diced |
400 g | carrots, peeled and diced |
500 g | chicken breast fillets, cut into 3cm cubes |
1 bunch(es) | spring onions, sliced |
1 tbsp | oil |
1 dash(es) | single cream |
300 ml | vegetable stock |
salt and freshly ground black pepper | |
1 tsp | sugar |
2 tsp | curry powder |
Instructions
In a large saucepan, heat the oil. Fry the meat for 5 minutes until slightly golden all around. Add the vegetables and cook stirring for 5minutes. Stir in the sugar and the curry powder and season with salt and pepper.Pour in the stock and bring to a boil. Reduce the heat and simmer for another 5 minutes. Stir in the cream. Adjust the seasoning before serving.
