Chicken breast in orange sauce recipe details
Ingredients
500 g | carrots, sliced |
150 g | shallots, sliced |
5 sprig(s) | thyme, chopped |
2 | ripe oranges, one thinly sliced and juice of the other |
1 | red chili, seeded and chopped |
4 | chicken breasts |
salt and pepper | |
2 tbsp | oil |
3 tbsp | honey |
200 ml | chicken stock |

Instructions
Rub the chicken breasts with salt and pepper. In a pan, heat the oil. Fry the chicken breasts from both sides over high heat for 2-3 minutes. Remove from the pan and set aside.Preheat the oven to 175°C.
Add in the pan the carrots, shallots, thyme and chili and sauté for 8-10 minutes. Stir in 1 tablespoon of honey. Season to taste with salt and pepper.
Transfer the vegetables into a buttered casserole dish. Place the chicken breasts on top and cover the meat with the orange slices. Pour in the stock and the orange juice and place the casserole dish into the oven. Bake for 15 minutes. Drizzle the chicken breasts with the remaining honey and bake for 10-15 more minutes.
