Chicken breast with apples and redcurrants recipe details
Ingredients
4 | chicken breasts, skinless, boneless |
500 g | leeks, sliced |
100 g | redcurrants, washed, stems removed |
1 medium | egg, lightly beaten |
½ tbsp | French mustard |
2 tbsp | flour |
2 tbsp | butter |
1 | Granny Smith apple, peeled, cored, sliced |
2 tbsp | fresh parsley, chopped |
salt and pepper, to taste |
Instructions
In a deep bowl, mix together the egg, mustard, and flour. Set aside.Season the chicken with salt and pepper.
Melt the butter in a frying pan. Coat the chicken with the egg mixture and palce in frying pan. Sauté, until golden brown on both sides, about 10 minutes.
Remove the chicken from the pan and keep warm.
Add the leeks, currants and apple to the same pan and cook, stirring, about 2 minutes. Continue cooking until warmed through and the vegetables and fruit are soft and juicy.
Transfer to a serving plate and arrange chicken on top. Sprinkle with parsley.
