Chicken Breast recipe

|300 g||chicken breast fillet|
|1 bunch(es)||green onions, chopped|
|200 g||ribbon noodles|
|4||tomatoes, peeled and roughly chopped|
|4 small||zucchini, cleaned and sliced|
|1||red bell pepper, cleaned and chopped|
|salt and freshly ground black pepper|
|1 tsp||dried thyme|
Preheat the oven to 80°C.
Drizzle the chicken breast with lemon juice and season with salt and pepper. Heat olive oil in an ovenproof pan and fry the chicken breast until golden all around. Transfer into the oven and leave there for 30 minutes.
After 20 minutes cook the noodles in salted water until al dente, drain, and toss in butter. In another pan heat olive oil and fry the vegetables with the thyme until soft. Season to taste with salt and pepper.
Carve the chicken breast into neat slices and serve with the noodles and vegetables.
