Glazed christmas ham recipe details
Ingredients
5 kg | leg of ham, cured and smoked |
some | cloves |
For the Glaze: | |
80 g | brown sugar |
5 tbsp | cranberry jam |
3 tbsp | honey |
2 tbsp | apple cider vinegar |
1 tbsp | flour |
2 tbsp | butter |
5 tbsp | fresh orange juice |
2 tbsp | mustard |
Instructions
Score ham fat into diamonds and press a whole clove into each diamond.Place the ham on a rack over a backing-tray filled with some water and bake in a preheated oven at about 170ºC for about 30 minutes.
Combine glaze ingredients and bring to a short boil, constantly stirring.
Coat the ham with one third of the glaze, make sure some gets into diamond cuts; and reduce the heat to about 110ºC. Bake the ham for one hour.
After 30 minutes brush in the second third, and after another 30 minutes the last third.
For a couple of minutes activate the grill, careful not to burn the ham.
Let ham stand 10 minutes before slicing.
