Duck breast in cherry sauce recipe details
Ingredients
4 | duck breasts |
salt and freshly ground black pepper | |
ground coriander | |
150 g | shallots, chopped |
150 ml | port wine |
400 ml | duck stock or chicken stock |
3 sprig(s) | thyme |
200 g | morello cherries, out of a glass, drained, some juice collected |
1 tbsp | corn starch |
750 g | pasta |
Instructions
Preheat the oven to 180°C.With a knife, score the duck skin crosswise. Rub the breasts with salt, pepper and coriander. In a dry pan fry the breasts skin-side down until most of the fat is extracted and the skin is crispy. Turn around and fry the flesh side for 2 minutes. Place the breasts skin-side up in a casserole dish and bake for 15 minutes.
Sauté the shallots in the pan. Pour in the wine and cook for 5 minutes. Stir in the stock and the thyme and cook for 5 more minutes. Add the cherries. Mix the corn starch with a little cherry juice, stir the mixture into the sauce and cook until thickened. Remove the thyme. Season to taste with salt and pepper.
Remove the duck breasts from the oven and wrap with aluminium foil, but leave the skin-side open. Allow to stand for 5 minutes.
Cook the pasta in salted water until al dente, then drain. Cut the duck breasts into slices. Stir the gravy into the cherry sauce.
Serve the duck breast with the cherry sauce and the pasta.
