Chicken booya recipe details
This is our family’s recipe for Chicken Booya. I have doctored it a little. Serve this at a party in the summer time and you will have a lot of happy people.

Ingredients
Serves: 50- 1 (4 to 5 pound) fryer chicken
- 2 pounds chicken breast
- 1 1/2 pounds stewing beef
- 1 1/2 pounds lean pork
- 2 cloves minced garlic
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- 3 beef bouillon cubes
- 2 chicken bouillon cubes
- 1 (46 ounce) can chicken stock, or more
- 1 pound onions, chopped
- 10 carrots, peeled and chopped
- 1/2 bunch celery, chopped
- 12 medium red potatoes, cut into bite-size pieces
- 1/2 head cabbage, shredded
- 2 bags frozen corn
- 2 bags frozen peas
- 1 quart tomato or V-8(R) juice
- 1/3 cup salt
- 2 tablespoons pepper
Preparation method
Prep: 1 hour | Cook: 4 hours1. Place chicken, beef, pork, garlic, sage thyme, all of the bouillon cubes and chicken stock in the stock pot, pour water in the pot until the meat is just covered by liquid. Make sure the stock pot is a big one because this is a little less than half of the of the recipe. Boil; reduce to a simmer for 1 1/2 hours.
2. Then you add chopped onions, carrots, and celery. Simmer for another 1 1/2 hours.
3. Finally add potatoes, shredded cabbage, frozen corn, frozen peas, tomato or V-8 juice, salt, and pepper. Simmer for another hour. You may need to add water to make it a little thinner but that is your choice. If it simmers all day you also can add a little water so it doesn’t get too thick.
