Chicken Balmoral is a delicious Scottish dish that combines tender chicken breasts with a rich and flavorful stuffing. This recipe takes the classic combination of chicken and haggis, a traditional Scottish sausage, and elevates it to a whole new level. The chicken breasts are stuffed with haggis and wrapped in bacon, then baked to perfection. The result is a succulent and indulgent dish that is sure to impress your guests.

Ingredients

2  chicken breast fillets
100 g haggis
6  bacon rashers
1 tbsp butter, melted
salt and freshly ground black pepper, to taste

Instructions

Preheat the oven to 200°C.

With a sharp knife cut a pocket into each chicken breast along the length. Shape the haggis to two rolls and tuck these into the pockets. Wrap each chicken breast in 3 rashers of bacon. Brush with melted butter and season generously with pepper and sparingly with salt.

Wrap in aluminium foil and bake the parcels for 10 minutes, then open the foil and bake for another 20 minutes.

Serve with fried potatoes and vegetables, e.g. mushy peas (s. our recipe in the database).
