Cherry bread pudding recipe details
Ingredients
60 g | dried cherries |
2 tbsp | orange juice or Grand Marnier if preferred |
100 g | brioches or other white bread, hard crusts removed and cut into cubes |
350 ml | milk |
125 ml | cream |
5 large | eggs |
150 g | sugar |
1 tsp | vanilla extract |
¼ tsp | salt |
freshly grated nutmeg |
Instructions
Place the cherries and orange juice (or liqueur) into a small microwave-safe bowl and heat in the microwave until very hot. Remove and set aside for about 1-1½ hours for the cherries to soften.Butter a 1¾-2 litre baking dish. Spread out the bread cubes in the dish evenly.
In a bowl or jug, whisk together the milk, cream, eggs, sugar, vanilla and salt. Sprinkle the cherries over the bread cubes together with any liquid remaining. Pour the custard mixture over the bread and lightly press the bread into the liquid to ensure that it is well soaked. Cover with cling film and set aside in the refrigerator for at least an hour or overnight if necessary.
Preheat the oven to Gas Mark 4, 180ºC, 350ºF and bake for 45-55 minutes without covering until the top is browned and the pudding is springy to the touch.
Remove from oven and grate nutmeg over the top. Serve immediately.
Will serve 8-12.
Option:
If you do not like the taste of cherries or simply want a change, replace the dried cherries with sultanas or with dried cranberries or dried blueberries for something a little more unusual.
