Cherry and walnut cake recipe details
Ingredients
325 g | self-raising flour |
250 g | unsalted butter at room temperature |
250 g | caster sugar |
100 g | glacÚ cherries, halved |
100 g | walnuts, chopped |
5 medium | egg, beaten |
1 pinch(es) | salt |
5 tbsp | milk |
Instructions
Preheat oven to Gas Mark 3, 160░C, 325░F.Grease and line a 9 inch, 22-23cm round cake tin.
Cream butter and sugar in a large bowl until light and fluffy. Add beaten egg and flour and beat well.
Add milk, cherries and walnuts and blend thoroughly. If making by electric mixer, stir in the cherries and nuts by hand to avoid them being unduly broken up.
Bake for about one hour or until a skewer inserted into centre comes out clean. Allow to cool in tin for about 15 minutes. Remove from tin and cool fully on a wire rack.
Remove lining paper and cut into wedges to serve.
Will comfortably serve 10-12 but may serve up to 16.
Option:
Replace the walnuts with an equal amount of pecans but reduce the sugar by 25g as the pecans are inherently sweeter.
