Cheftroyrd's seafood and chicken dish recipe details
This is a very simple and very delicious entree. Serve with rice or pasta (or like me right out of the pan when no-one is looking). I make it on the side burner of my grill so I can be near the flame for other items 😉
Ready in: 1 hour 15 mins
Ingredients
Serves: 5- 1 pound peppered bacon, cut into 1-inch pieces
- 2 pounds chicken tenderloins
- 2 pounds large shrimp, peeled and deveined
- 2 pounds large sea scallops
- onion powder to taste
- garlic powder to taste
- salt or seasoned salt to taste
- 1/2 cup Worchestershire sauce
- 1/2 cup lemon juice
- 2 cups mozzarella or pepperjack cheese
Preparation method
Prep: 30 mins | Cook: 45 mins1. Put bacon in large skillet on medium high and heat until it is sizzling and has begun to release its grease. Add the chicken and turn down heat to medium or medium low.
2. When chicken is almost completely cooked (don’t over do it here, it will dry out), add the shrimp and scallops over the top. Do not stir. Reduce heat to low.
3. When the mixture has come down to a simmer, add the onion powder, garlic powder, salt, Worchestershire sauce, and lemon juice.
4. Let simmer until shrimp and scallops are tender. Turn up heat to high and stir all ingredients in pan. Let cook on high for 5 to 10 minutes.
5. Remove from heat. Sprinkle cheese on top and let stand covered for 5 to 10 minutes.Alternate method
For those that can handle the heat add some spice. I like to use fresh jalapenos or cayenne. Add them to the bacon/chicken mix. Diced tomatoes are also very good.
