Ingredients
Serves: 2- 2 small zucchini, halved lengthwise and sliced
- 1/4 cup chopped onion
- 2 eggs
- 1/2 teaspoon chicken bouillon granules
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon ground mustard
- 1/4 teaspoon pepper
- 1 cup shredded Swiss cheese
Preparation method
Prep: 20 mins | Cook: 25 mins1. Preheat oven to 350 degrees F and coat a 1 quart baking dish with nonstick cooking spray.
2. Steam the zucchini and onion in a steamer for about 5 minutes, until tender but still with a little bite left. Drain and cool slightly.
3. In a mixing bowl, whisk the eggs with bouillon, Italian seasoning, mustard, and pepper.
4. Place half of the zucchini in the prepared baking dish, distribute 1/2 cup cheese over it, then pour the rest of the zucchini on top and cover with remaining cheese. Pour the egg mixture into the baking dish.
5. Bake for 25 to 30 minutes, until egg is set completely.
