Lemon squares recipe details
- Ingredients
- 3/4 cup plus 3 Tablespoons all-purpose flour
- 1/4 cup confectioners’ sugar (plus additional for sifting over the lemon squares)
- 1 stick (1/2 cup) cold unsalted butter, cut into bits
- 1 cup granulated sugar
- 4 large egg yolks
- 1/2 cup milk
- 3 Tablespoons fresh lemon juice
In a large bowl, blend together 3/4 cup of the flour, 1/4 cup of the confectioners’ sugar, and the butter until the mixture resembles coarse meal. Press the mixture evenly onto the bottom of an 8-inch square baking pan and bake it in the bottom third of a preheated 350-degree oven for 20 minutes or until it is pale golden.
In a saucepan, whisk together the granulated sugar, the remaining 3 tablespoons flour, and a pinch of salt. Whisk in the yolks, then whisk in the milk slowly. Cook the mixture over moderately low heat, stirring for 5 minutes or until it is thickened slightly. Remove the pan from the heat and stir in the lemon juice. Transfer the mixture to a metal bowl set in a larger bowl of ice and cold water and stir it until it is cool.
Pour the mixture over the crust and bake the confection in the bottom third of the 350-degree oven for 30 minutes or until it is set.
Sift the additional confectioners’ sugar over the confection, let the confection cool on a rack, and cut it into squares.
Makes: about 16 lemon squares.
