Ingredients
180 g | Cheddar cheese, grated |
1 large | egg, or 2 small ones |
200 g | flour |
4 tsp | baking powder |
1 tsp | salt |
1 pinch(es) | pepper |
5 tbsp | butter |
180 ml | milk |
Instructions
Preheat oven to 250° C.Sift together the dry ingredients and add the butter by using your finger tips. (Do not use a mixer it will spoil the texture).
Combine the beaten egg with 1/2 cup of milk and keep 1 tbsp of this mixture for brushing the scones.
Add the grated cheese to the flour mixture and then mix in the egg and milk mixture using a spatula. Do not press or knead the dough. Use sufficient milk to make dough that can be rolled.
Turn onto a floured board and pat lightly with your hands or roll out lightly with a rolling pin to a thickness of 2cm. Cut into desired shape using a biscuit cutter or knife.
Brush on the rest of the milk and egg mixture onto the scones and bake on a greased baking sheet in a hot oven at 250°C for 10 minutes or until nicely browned on top.
Serve warm with butter.
