Ingredients

180 g Cheddar cheese, grated
1 large egg, or 2 small ones
200 g flour
4 tsp baking powder
1 tsp salt
1 pinch(es) pepper
5 tbsp butter
180 ml milk

Instructions

Preheat oven to 250° C.

Sift together the dry ingredients and add the butter by using your finger tips. (Do not use a mixer it will spoil the texture).

Combine the beaten egg with 1/2 cup of milk and keep 1 tbsp of this mixture for brushing the scones.

Add the grated cheese to the flour mixture and then mix in the egg and milk mixture using a spatula. Do not press or knead the dough. Use sufficient milk to make dough that can be rolled.

Turn onto a floured board and pat lightly with your hands or roll out lightly with a rolling pin to a thickness of 2cm. Cut into desired shape using a biscuit cutter or knife.

Brush on the rest of the milk and egg mixture onto the scones and bake on a greased baking sheet in a hot oven at 250°C for 10 minutes or until nicely browned on top.

Serve warm with butter.
