Ingredients
120 g | flour |
1 tbsp | baking powder |
1 tbsp | baking soda |
1 tbsp | sugar |
75 g | vegetable shortening |
85 g | sharp cheddar |
230 medium | buttermilk |
1 pinch(es) | salt |
40 g | butter |
1 tbsp | lemon juice, fresh |
1 tbsp | parsley, fresh, chopped |
Instructions
Preheat oven to 175°C.In a bowl, mix flour, baking powder, soda, sugar and salt. Cut shortening into small pieces and mix into flour. Add the cheese and mix. Add buttermilk all at once and mix everything. Do not mix the batter for too long, or the biscuits will get tough. It is ok to still have small lumps in the batter though.
Drop batter onto well greased cookie sheet using a tablespoon. Melt the rest of the butter and brush tops of biscuits.
Bake for 12-15 minutes until golden brown. While biscuits are baking, mix lemon juice and parsley into leftover basting butter.
After removing biscuits from oven, brush again with the lemon butter.
