Ingredients
For the marinade: | |
250 ml | vinegar |
150 ml | oil, good vegetable, no olive oil |
80 g | sugar |
1 tbsp | salt |
½ tbsp | pepper, freshly ground |
1 clove(s) | or 2 gloves of garlic, minced; or 1 tsp garlic powder |
1 tbsp | mustard powder |
For the coleslaw: | |
1300 g | white cabbage, finely sliced |
2 handful | red cabbage, finely sliced; or: 1-2 carrots, shredded |
2 large | or 3 medium onions, finely sliced |
Instructions
Bring combined marinade ingredients to a boil, pour over vegetables in a large bowl, toss well and allow to marinate for at least 5 hours; when using red cabbage, 12 hours after tossing with marinade a pinkish touch will show.Variations:
You can always add some cream or yoghurt after marinating, just before serving, if you prefer the smoother touch with your coleslaw.
Left-overs of the red cabbage, finely sliced, can be blanched to serve as another salad; or deep-frozen for a vegetable side dish to go with for example a nice little pork roast.
