Char siu pork fried rice recipe details
Ingredients
350 g | pork fillet |
70 g | char siu sauce |
1 tbsp | vegetable oil |
2 | eggs, beaten |
1 | onion, chopped |
3 | rashers rindless bacon, chopped |
250 g | rice, basmati or jasmine |
3 tbsp | dark soy sauce |
3 tbsp | sweet chilli sauce |
150 g | corn kernals, canned, drained |
100 g | frozen peas |
5 | spring onions, chopped to serve |
Instructions
Cook rice and cool.Place pork in baking pan and coat well with the char siu sauce. Marinate for 30 minutes.
Preaheat oven (160ºC, fan-forced. Bake pork for 30 minutes, turning once. Cool, then slice.
Heat oil in a hot wok or heavy based pan. Add eggs, swirling over base until cooked like an omelette. Remove, roll and shred. Set aside.
In same wok, if necessary add more oil, stir-fry onion on high for 1-2 minutes. Add bacon and cook for 1 minute.
Stir in rice and sauces. Stir-fry for 2 minutes. Toss through pork, corn, peas and egg. Stir-fry for 1-2 minutes.
Serve topped with spring onions.
