Celeriac and carrot salad with almonds recipe details
Ingredients
1 bulb(s) | celeriac, grated |
2 | carrots, grated |
3 tbsp | almonds, grated |
1 | onion, finely chopped |
8 tbsp | sour cream |
2 tbsp | lemon juice |
1 tbsp | tomato puree |
salt and pepper | |
1 tbsp | parsley, chopped |
Instructions
In a bowl, mix together the celeriac, carrots, almonds and onion.In a small bowl, mix together the sour cream, lemon juice and tomato purée. Season to taste with salt and pepper. Pour the dressing over the salad and mix well. Let steep for half an hour, then check seasoning and correct, if necessary.
Serve garnished with fresh parsley.
