Ingredients
1 | saddle of lamb |
3 tbsp | peppercorns, crushed |
4 tbsp | breadcrumbs |
salt and freshly ground black pepper | |
2 tbsp | mustard |
50 g | cold butter flakes |
2 clove(s) | garlic, minced |
150 ml | dry white wine |
sugar |
Instructions
Spread the upper side of the saddle of lamb with mustard. Mix the peppercorns with breadcrumbs, a teaspoon of salt and the garlic and coat the meat with the mixture.Preheat the oven to 200°C. Place the meat in a casserole dish and bake for 40 minutes. Remove the roast from the casserole dish. Cover with foil and keep warm.
Pour the wine into the casserole dish and stir to loosen the drippings. Bring to a boil and cook for some minutes. Season to taste with salt, pepper and sugar. Whisk in the butter.
Carve the meat and serve with the sauce immediately.
