Ingredients
Serves: 4- 1 tablespoon sweet paprika
- 2 teaspoons turmeric
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1/2 teaspoon ground cinnamon
- 2 pounds skinless boneless chicken, cut into 2-inch pieces
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 4 large cloves garlic, crushed
- 1 thinly sliced lemon
- Salt and pepper
- 2 1/2 cups chicken stock
- 1 cup pitted large olives
- Juice from 1 lemon
Preparation method
Prep: 5 mins | Cook: 15 mins1. Place paprika, turmeric, coriander, cumin, and cinnamon in a large plastic resealable bag. Add chicken, seal bag, and shake to coat.
2. Pour olive oil into a large skillet and set over medium-high heat. Cook chicken in hot oil for about 4 minutes, then stir in onion, garlic, sliced lemon, salt, and pepper. Cook for another 7 minutes to cook the onion.
3. Stir in 1 cup chicken broth, olives, and lemon juice, along with more salt and pepper if needed. Serve.
