Carrot cake with walnut and cream cheese frosting recipe details
Ingredients
250 g | all purpose flour |
4 medium | eggs |
200 g | dark brown sugar or brown sugar |
200 g | white sugar |
290 ml | vegetable oil or olive oil |
2 tsp | ground cinnamon |
1 tsp | mixed spice |
½ tsp | salt |
2 tsp | baking soda |
1 tsp | baking powder |
2 tsp | vanilla extract |
330 g | finely grated carrot |
110 g | chopped walnut |
For the frosting: | |
80 g | butter, soft |
225 g | cream cheese, soft |
240 g | icing sugar or more |
½ tsp | vanilla extract |
Instructions
Preheat the oven to 180°C. Line a greased 9 inch or 23cm cake tin with baking paper.In a mixing bowl, cream together the eggs, sugars, oil and vanilla extract. Sift flour, baking soda, baking powder, salt, ground cinnamon and mixed spice in the wet mixture and fold in until well combined. Add carrots and walnuts and stir until well combined.
Fill the batter into the cake tin and bake for 40 – 50 minutes or until a toothpick, inserted in the middle of the cake, comes out clean. Leave the cake in the tin to cool for 10 minutes. Transfer the cake to a wire rack to cool completely.
For the frosting cream together butter, cream cheese, vanilla extract and the icing sugar. Gradually add in more icing sugar to the sweetness you desire. The cake itself is not very sweet, so you might want to have a sweeter frosting.
Refrigerate the frosting for an hour for easier spreading. Coat the cake with the frosting.
