Cardinal soup recipe details
Ingredients
1 kg | ripe tomatoes |
1 | bay leaf |
2 sprig(s) | thyme |
2 | cloves |
1 ½ l | beef broth |
3 tbsp | potato flour |
2 tbsp | madeira |
½ | lemon, grated peel |
¼ l | white wine |
salt and white pepper | |
sugar | |
cayenne pepper | |
250 g | single cream |
Instructions
Roughly chop the tomatoes, place into a saucepan, add the bay leaf, the thyme and the cloves, pour in the beef stock and bring to the boil and cook for approximately 10 minutes.Strain the soup through a sieve back into the saucepan. Mix the potato flour with the Madeira until smooth and stir this into the soup. Allow to simmer over low heat for another 5 minutes, stirring constantly. Add the white wine and season to taste with lemon rind, salt, sugar, pepper and cayenne pepper.
Whisk the single cream until stiff. Ladle the soup into plates and serve garnished each with a dollop of whipped cream.
