Cardamom palmiers recipe details
Ingredients
120 g | brown sugar |
2 tsp | ground cardamom |
1 sheet(s) | puff pastry |
Instructions
Combine sugar and cardamom in a small bowl and mix until even.Unfold the dough and lightly roll to flatten. Arrange the pastry with the longest sides facing you. Sprinkle half the sugar mixture evenly over the pastry and lightly roll it into the pastry. Turn the pastry over and repeat with the other half of the sugar mixture.
Starting with the side closest to you, fold the dough about an inch at a time, towards the centre of the pastry. Turn the dough around and repeat until the two stacks are almost touching. Fold the two sides as if closing a book.
Wrap the dough tightly in cling film and chill for an hour.
Preheat oven to Gas Mark 6, 200°C, 400°F.
Use a sharp knife to cut the pastry into ½-inch or 12mm slices. Place cut side down on 2 parchment-lined baking sheets, about 2 inches, 5cm apart and bake for about 10 minutes or until doubled in size. Allow to cool completely on the trays.
