Ingredients

2 lb Jerusalem artichokes
3 pint(s) chicken stock
1 pint(s) milk
1  turnip, peeled and chopped
½ head(s) celery, chopped
1 large onion, chopped
1 ounce(s) flour
1 tsp white vinegar
2 tsp lemon juice
salt
cayenne pepper
nutmeg

Instructions

Peel the Jerusalem artichokes thinly, slice them and put into a bowl of water with the vinegar and lemon juice and leave to whiten.

Heat the stock in a large saucepan and add the artichokes, onion, turnip and celery with the seasonings and simmer slowly until the vegetables are tender. Take out the vegetable and rub through a sieve, returning the puree to the soup (or the modern way, blitz the soup with a stick blender). Mix the flour and some of the milk into a smooth paste and slowly add the rest of the milk, and pour into the pan. Simmer for a few minutes, and adjust the seasoning.

Serve with croutons of fired bread or toast.
