Palestine soup recipe details
Ingredients
2 lb | Jerusalem artichokes |
3 pint(s) | chicken stock |
1 pint(s) | milk |
1 | turnip, peeled and chopped |
½ head(s) | celery, chopped |
1 large | onion, chopped |
1 ounce(s) | flour |
1 tsp | white vinegar |
2 tsp | lemon juice |
salt | |
cayenne pepper | |
nutmeg |
Instructions
Peel the Jerusalem artichokes thinly, slice them and put into a bowl of water with the vinegar and lemon juice and leave to whiten.Heat the stock in a large saucepan and add the artichokes, onion, turnip and celery with the seasonings and simmer slowly until the vegetables are tender. Take out the vegetable and rub through a sieve, returning the puree to the soup (or the modern way, blitz the soup with a stick blender). Mix the flour and some of the milk into a smooth paste and slowly add the rest of the milk, and pour into the pan. Simmer for a few minutes, and adjust the seasoning.
Serve with croutons of fired bread or toast.
