Caramelle in tomato sauce recipe details
Ingredients
350 g | flour |
½ tsp | salt |
1 tbsp | oil |
400 g | aubergines |
75 g | canned tomato peppers, in strips |
2 clove(s) | garlic, chopped |
½ bunch(es) | parsley, chopped |

125 g | lean minced beef |
2 | onions, diced |
1 tbsp | olive oil |
650 g | canned tomatoes, diced |
125 ml | vegetable stock |
2 sprig(s) | basil |
Instructions
In a bowl, combine the flour, salt, oil and 250 ml of water. Knead until a smooth and pliable dough has formed. Allow to rest for 30 minutes.Prick the aubergines with a fork several times. Place onto a lined baking tray and roast for 40 minutes in the preheated oven at 200°C until charred and very soft. Allow to cool. Halve the cooled aubergines and scoop out the pulp. Finely chop the aubergine pulp. Mix with the minced beef, parsley, garlic and finely chopped tomato peppers. Season to taste with salt and pepper.
Sauté the onions in oil until lucent. Add the tomatoes and the stock and bring to a boil. Cover and cook over low heat for 15 minutes. Season to taste with salt, pepper and sugar.
Roll out the dough thinly and cut into squares of approximately 12x12cm. Top the squares with spoonfuls of the aubergine and mince filling. Roll up the squares like cannelloni and twist the ends like bon-bons. Cook the pasta in salted water for 6 minutes.
Serve with the tomato sauce and garnished with basil.
