Ingredients

250 g caster sugar
250 g white honey, if available or any clear honey
250 g blanched almonds, toasted
250 g hazelnuts, toasted
5 large eggs, whites only
2 tsp ground cinnamon
rice paper to line mould

Instructions

Place the nuts in a food processor and pulse until finely ground and just becoming pasty.

Beat the egg whites in a clean bowl until very stiff and add them to the nuts.

Place honey and sugar in a pan and bring to a boil and the sugar has completely dissolved. Mix the nut mixture into the honey and sugar. Stir constantly and thoroughly for 10 minutes.

Remove from heat and pour into metal mould (they use a prepared wooden mould in Spain) lined with rice paper.

Leave to cool and sprinkle with cinnamon. Cut into squares.
