Caramelized onion macaroni and cheese recipe details

Ingredients
Serves: 4- 1/4 cup butter
- 2 large onions, thinly sliced
- 1 teaspoon ground thyme
- 1 bay leaf
- Salt and pepper
- 1 pound penne pasta
- 2 tablespoons flour
- 1 cup chicken stock
- 1 cup whole milk
- 1/4 teaspoon dry mustard (or 1 tablespoon prepared mustard), to tast
- 3/4 pound cheddar cheese, shredded
Preparation method
Prep: 25 mins | Cook: 20 mins1. Place half of the butter in a large skillet and set over medium-high heat. Cook onions, thyme, and bay leaf in melted butter for about 5 minutes, then add salt and pepper to taste and turn heat down to low. Cook for another 15 minutes until onions are well browned. Pour onto a plate.
2. Bring a large pot of salted water to boil over high heat. Add pasta and cook until al dente, according to package directions, then drain.
3. While pasta cooks: Add remaining butter to the skillet and set back over medium heat. When butter melts, add the flour and cook, stirring, for 1 minute. Slowly pour in chicken stock and milk.
4. When liquids come to a boil, add salt, pepper, and mustard. Turn heat down to low and cook for another 5 minutes to thicken. Stir in cheese to melt, then add onions.
5. Pour sauce over cooked pasta, stir, and serve.
