No shortcuts, guys. To get the sweet flavor of caramelized onions you’ll need an hour of stirring over low heat. But once they’re ready, get out to the grill and add the smoky flavor of your wood chips for an unforgettable pizza.

Ingredients
Serves: 4- 4 teaspoons olive oil
- 3 yellow onions, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 teaspoons balsamic vinegar
- 1 pound refrigerated pizza dough, divided into four pieces
- 6 ounces blue cheese, crumbled
- 4 teaspoons chopped fresh rosemary
Preparation method
Prep: 1 hour 40 mins | Cook: 5 mins1. Pour 2 teaspoons oil into a Dutch oven and set over very low heat. Stir onions into the oil and sprinkle with salt. Let the onions cook very slowly, stirring occasionally, for 1 hour; they will become extremely soft and sweet.
2. Continue to cook the onions for another 25 minutes with the heat turned up to medium-low. They will brown nicely. Toss with pepper and vinegar.
3. Preheat grill to medium-high and oil grate well.
4. Stretch out each piece of dough into a 1/4-inch thick circle. Place on grill and cook for about 2 minutes to brown the bottom. Then transfer to a cutting board, flipping grilled side down.
5. Top the pizzas with cheese, caramelized onions, rosemary, and the remaining olive oil. Set back on the grill, close the lid, and cook for another 2 minutes to melt the cheeses and brown the second side of the crust.
6. Slice into wedges and serve.
