Capsicum salad recipe details
Ingredients
3 | capsicum, yellow, red and green |
seasalt | |
pepper | |
herbs, of your choice | |
5 tbsp | olive oil |
balsamic vinegar, optional | |
some | fresh basil leaves |
Instructions
Wash the capsicum and cut into quarters. Clean out the seeds and the white skin. Put skin side up on a baking tray and bake at 180°C for 40 minutes or until the skin browns and bubbles. Let them cool down a bit and then peel skin off.Lay the capsicum out on a plate and sprinkle with salt, pepper and any herbs you like, add the olive oil, some balsamic vinegar if you like and sprinkle with fresh basil leaves. Leave to marinate for 30 minutes.
