Ingredients
1 kg | red cabbage, finely cut into stripes |
1 | apple, peeled and diced |
1 ½ l | red wine |
4 | bay leaves |
2 | cloves |
1 tsp | cinnamon |
300 g | sugar |
100 ml | cider vinegar |
1 l | apple juice |
1 tbsp | salt |
1 | Spanish onion, finely diced |
150 g | butter |
200 g | cowberry compote |
200 g | apple sauce |
Instructions
In a a large bowl, combine the red cabbage with the apple, wine, bay leaves, cloves, cinnamon, sugar, vinegar, apple juice and salt. Mix all ingredients and knead the cabbage for a minute. Transfer the lot into an airtight container, seal and allow to marinate for 2 days in the fridge.In a large pot melt the butter and sauté the onion until lucent. Add the red cabbage including the marinade. Cook over medium heat until the red cabbage is soft and the liquid is almost evaporated.
Refine with the cowberries and the apple sauce and check seasoning. Serve immediately.
