Ingredients

275 g rye flour
1 tsp bicarbonate of soda
1 tsp salt
350 ml buttermilk
2 medium eggs, beaten
60 ml molasses or treacle
oil for frying

Instructions

Quantity produced depends upon the size produced.

Mix the flour, soda and salt together in a bowl. Blend the milk, eggs and treacle in another bowl or jug. Add the liquids to the dry ingredients and beat until thoroughly blended.

Heat a shallow frying pan or large, heavy-based saucepan with sufficient oil to shallow fry and when hot, add tablespoons full of batter. Fry for about 3 minutes, turning occasionally, until well browned on both sides.

Drain on several layers of kitchen paper and serve immediately.
