Ingredients
125 g | plain flour |
60 g | sugar |
½ tsp | bicarbonate of soda |
½ tsp | cream of tartar |
1 pinch(es) | salt |
40 g | unsalted butter |
2 medium | eggs |
2 tbsp | milk |
450 g | stewed fruit, apples, rhubarb, gooseberries, figs etc |
Instructions
Preheat oven to Gas Mark 5, 190°C, 375°F.Mix together the dry ingredients in a bowl and rub in the butter. Lightly mix the eggs without beating and make a well in the centre of the flour. Add the eggs and mix to a thick batter with the milk, as required.
Place the stewed fruit in the base of an ovenproof dish and drop in spoonfuls of the batter.
Bake for about 30 minutes or until risen and golden brown and cooked through.
Allow to cool and serve warm or cold.
